GFCF Haystacks

I’ve taken the basic chow mein noodle with melted butterscotch chips recipe and modified it to suit my GFCF family. The result is a no-bake treat that no one can resist.


1 (10 ounce) package ENJOY LIFE Semi-sweet chocolate Mini Chips [GFCF + dairy, nut & soy free]

3/4 cup Sunbutter [if you don’t have peanut allergies, go for peanut butter]

10 ounces Chex GF cereals

3 cups GF pretzels

Nuts, optional

1. LINE baking sheets or trays with waxed paper.
2. MICROWAVE chocolate chips in large, microwave-safe bowl on MEDIUM-HIGH (70 percent) power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Stir in Sunbutter until well-blended. Add cereals and pretzels; toss until coated. [If mixture is too wet, add more cereal. Also, feel free to add nuts or sunflower seeds—whatever your family is able to eat.] Drop by rounded tablespoon onto prepared baking sheets. Refrigerate until ready to serve.
3. DOUBLE BOILER METHOD: MELT chocolate chips over hot (not boiling) water; stir until smooth. Remove from heat; stir in Sunbutter. Transfer to large bowl. Add cereals and pretzels; proceed as above.
